Lentil Salad

Ingredients

  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 can drained and rinsed lentils
  • 4 oz crumbled feta cheese
  • 1 sweet red pepper
  • 2 green onion
  • 1 garlic clove

Method

In bowl, whisk juice, oil, salt and pepper. Add lentils, cheese, pepper, onions and garlic; stir.
