This is the way I have always made mac and cheese, no cheese sauce, just nice stringy cheese with the macaroni.

  • 1 small block mild Cheddar cheese
  • 1 small block Cheddar cheese
  • 4 slices side bacon
  • 1 can diced tomatoes optional
  • 2 cups macaroni


Preheat oven to 350 degrees. Cook macaroni as per package instructions. Drain and rinse. Shred each type of cheese and set aside Slice bacon into small pieces and fry until crispy. Drain on paper towel to get rid of some of the fat. In the bottom of a 2 quart casserole spread a small amount of both cheese and a few pieces of bacon. Then add a layer of the cooked macaroni. Keep layering the cheese, bacon and macaroni, ending with the cheese. Place in oven and cook for about 35 minutes. If you like you an heat the canned tomatoes and serve on top of the individual serving of the mac and cheese. This is my husband's preference and sometimes we do and sometimes we don't.
