One-bite fresh mozzarella balls are a delicious canvas for a flavourful dressing. The longer they stand, the better they taste, so this is a great recipe to prepare in advance. Add a few cherry tomatoes, if desired, to make this a Caprese salad.

Ingredients

  • 1 pkg (200 g) mini fresh mozzarella balls drained
  • 1 tablespoon olive oil
  • 1 teaspoon white balsamic vinegar
  • 1 teaspoon lemon juice
  • 4 thin strips lemon zest
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 fresh basil leaves torn

Method

In bowl, combine mozzarella balls, oil, vinegar, lemon zest, salt and pepper. (Make-ahead: Refrigerate in airtight container for up to 24 hours; let stand at room temperature for 15 minutes.) Stir in basil.
