Mini Croque Monsieurs

Bite-size versions of this ham-and-cheese classic get dressed in a coating of bechamel sauce and cheese before broiling.

Ingredients

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1 pinch salt
  • 1 pinch pepper
  • 4 slices light rye bread crusts removed
  • 4 teaspoons Dijon mustard
  • 4 slices Black Forest ham (about 4 oz/125 g)
  • 1/2 cup shredded Gruyere cheese
  • 1 tablespoon chopped fresh parsley

Method

In small saucepan, melt butter over medium heat; whisk in flour and cook, whisking, for 1 minute. Gradually whisk in milk, salt and pepper; bring to boil, whisking, until thickened, about 2 minutes. Set aside.

Toast bread. Spread with mustard; top with ham. Transfer to greased rimmed baking sheet. Spoon sauce over top; sprinkle with cheese. Broil until cheese bubbles and begins to brown, about 2 minutes. Let stand for 1 minute; cut into quarters. Sprinkle with parsley.
