Love avocados? Whip together a quick and easy salad with delicious mixed greens and avocados with a simple, zesty dressing.

Ingredients

  • 8 cups torn mixed salad greens
  • 1 sweet red pepper
  • 1 avocado peeled, pitted and sliced
  • 1/4 cup sliced almond toasted
  • 2 tablespoons unsalted sunflower seeds
  • 1/4 cup canola oil or sunflower oil or canola oil
  • 2 tablespoons chopped fresh chives or green onions
  • 1 teaspoon grated lemon rind
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 1 garlic clove minced
  • 1/4 teaspoon salt and pepper each

Method

Dressing: In small bowl, whisk together oil, chives, lemon rind and juice, mustard, garlic, salt and pepper.

In large bowl, toss salad greens, red pepper and avocado with dressing to coat. Sprinkle with almonds and sunflower seeds. Makes 4 to 6 servings.
