Pork and Potato Hash

Whether you're indulging in this dish for breakfast or dinner, the combo of crispy potatoes, tender pork and oozy egg comes pretty close to heaven on a plate.

Ingredients

  • 4 teaspoons vegetable oil
  • 675 g Yellow-fleshed potatoes peeled and cubed (about 3 cups)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon each salt and pepper
  • 1 cup Slow Cooker Shredded Pork
  • 4 green onions sliced
  • 1 tablespoon butter
  • 4 eggs

Method

In nonstick skillet, heat oil over medium heat; cook potatoes, paprika and half each of the salt and pepper, stirring occasionally, until potatoes are tender and golden, about 45 minutes.

Stir in pork and green onions; cook, stirring, until heated through, about 5 minutes. Using slotted spoon, transfer to bowl; keep warm.

Drain fat from pan; wipe clean. Melt butter over medium heat; cook eggs until whites are set but yolks are still runny, about 3 minutes, or until desired doneness. Sprinkle with remaining salt and pepper. Serve over potato mixture.
