Red Leaf Lettuce Salad

Ingredients

  • 2 tablespoons wine vinegar
  • 2 tablespoons orange juice
  • 2 tablespoons extra-virgin olive oil
  • 2 teaspoons Dijon mustard
  • 2 teaspoons liquid honey
  • 1 clove garlic minced
  • 1 pinch salt
  • 1 pinch pepper
  • 4 cups torn red leaf lettuce
  • 1 celery stalk thinly sliced
  • 1 carrots thinly sliced
  • 1/4 cup thinly sliced sweet onion
  • 12 cherry tomatoes halved

Method

In large bowl, whisk together vinegar, orange juice, olive oil, mustard, honey, garlic, salt and pepper. Add lettuce, celery, carrot, onion and tomatoes. Toss to coat.
