MethodWrap beets in large piece of heavy-duty foil (or double-thickness regular foil). Roast in 325°F (160°C) oven until fork-tender, 2-1/2 to 3 hours.
Transfer beets to serving dish; sprinkle with oil, vinegar and salt.
