Roasted Grape Tomatoes

These “candied” tomatoes are the perfect condiment for just about any sandwich.

Ingredients

  • 2 1/4 cups grape tomatoes halved
  • 2 1/4 cups cherry tomatoes halved
  • 1 tablespoon olive oil
  • 1 1/2 teaspoon balsamic vinegar
  • 1/4 teaspoon salt

Method

In 8-inch (2 L) square baking dish or ovenproof skillet, toss together tomatoes, oil, vinegar and salt.

Roast in 400°F (200°C) oven until shrivelled, 30 to 35 minutes.
