Romaine and Radicchio Salad with Cucumber

The slight pleasant bitterness of radicchio is balanced by cool summer cucumber and sweet romaine in this simple and attractive salad.

Ingredients

  • 4 cups torn romaine leaves
  • 2 cups torn radicchio leaves
  • 1/2 English cucumber sliced
  • 4 teaspoons wine vinegar
  • 1 tablespoon chopped fresh oregano

Method

In salad bowl, toss together romaine, radicchio and cucumber. In small bowl, whisk together 3 tbsp (50 mL) olive oil, vinegar, oregano and 1/4 tsp (1 mL) each salt and pepper. Pour over greens and toss to coat.
