Romaine Salad with Lemon Vinaigrette

Toss this lemony salad with croutons, cucumbers or shaved fennel – or whatever crunchy additions you like.

Ingredients

  • 1/3 cup olive oil
  • 3 tablespoons lemon juice
  • 2 teaspoons chopped fresh dill
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon granulated sugar
  • 1/4 teaspoon pepper
  • 1 romaine lettuce
  • 1/2 cup shredded radicchio lettuce
  • 1/2 cup thinly sliced radish

Method

In small bowl, whisk together oil, lemon juice, dill, Dijon mustard, salt, sugar and pepper.

Tear romaine lettuce into bite-size pieces. In large bowl, toss together romaine, radicchio and radishes; add dressing and toss to coat.
