Slow Cooker Chunky Beet Soup With Sausage

This hearty soup makes the most of winter vegetables. Kielbasa sausage adds a richness and peppery flavour to the broth.

Ingredients

  • 2 lbs beets peeled and diced
  • 2 ribs celery diced
  • 2 carrots diced
  • 1 potato peeled and diced
  • 1 onion diced
  • 4 oz kielbasa sausages diced
  • 2 teaspoons dried dillweed
  • 1 teaspoon caraway seeds
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 cups sodium-reduced chicken broth
  • 4 cups water
  • 2 tablespoons tomato paste
  • 2 tablespoons lemon juice
Garnish:
  • 1/3 cup sour cream
  • 2 green onions thinly sliced

Method

In slow cooker, combine beets, celery, carrots, potato, onion, kielbasa, dillweed, caraway seeds, salt and pepper. Stir in chicken broth, water and tomato paste.

Cover and cook on low until vegetables are tender, 6 to 8 hours. Using potato masher or hand blender, mash several times to break up about half of the vegetables. Stir in lemon juice.

Garnish: Top each serving with sour cream and green onions.
