Ingredients

  • 1 teaspoon olive oil
  • 2 green onions sliced
  • 1 cup cooked quinoa
  • 1 cup rinsed drained canned black bean
  • 1/2 cup frozen corn kernels
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin

Method

In skillet, heat oil over medium-high heat; sauté green onions until starting to soften, about 2 minutes. Stir in quinoa, beans, corn, chili powder and cumin; cook until heated through, about 3 minutes.
