Summer Melon Salad with Fresh Ginger and Mint

Ingredients

  • 1 teaspoon grated gingerroot
  • 1 teaspoon liquid honey
  • 1/2 teaspoon grated lime rind
  • 3 tablespoons lime juice
  • 1 pinch salt
  • 2 cups cubed peeled honeydew melon
  • 2 cups cubed peeled cantaloupes
  • 2 cups strawberries halved
  • 2 tablespoons shredded fresh mint

Method

In large bowl, whisk together ginger, honey, lime rind and juice and salt. Add honeydew, cantaloupe, strawberries and half of the mint; toss gently. Cover and refrigerate for 30 minutes. (Make-ahead: Refrigerate for up to 6 hours.) Garnish with remaining mint.
