Put the oil in a pan and sautee the onions and garlic until translucent. Add the ginger and sautee for 1 more minute. add the chopped sweet potato, the chicken stock the salt and pepper and boil til the potatoes are tender. Use an emmersion blender to puree - or a blender just be careful not to overfill the blender and hold the lid on tight.
