Swiss Pesto Panini

This panini turns leftover roast chicken (or turkey) into a quick lunch or light dinner. Serve with crudit?s or a tossed salad to complement the richness of the cheese. No panini press? No problem. Cook in a grill pan over medium heat, pressing and turning once.

Ingredients

  • 2 slices multigrain bread
  • 1 slice Swiss cheese
  • 3/4 cups sliced cooked chicken
  • 2 slices tomatoes
  • 1/4 cup fresh baby spinach
  • 1 teaspoon sun-dried tomato pesto
  • 2 teaspoons butter softened

Method

Top 1 of the bread slices with Swiss cheese, chicken, tomato and spinach. Spread pesto over remaining bread slice; place, pesto side down, on spinach. Spread butter over outside of sandwich.

Grill in panini press until cheese is melted and bread is crisp, about 4 minutes.
