This is what I cook for myself when I have no meat in the house, but still want a hearty meal.

  • 1 cup parboiled rice
  • 1/2 cup Cheddar cheese
  • 1 pkg taco seasoning
  • 1 tomato
  • 1/2 cup sour cream


Prepare rice as directed, adding tomatoes and taco seasoning in with rice. Let simmer together until done. When just finished, add the sour cream and cheddar cheese and mix until all the cheese is melted. There you have it, Taco Rice!
