Toasted Curried Chicken Salad Sandwiches

Ingredients

  • 8 whole wheat bread
  • 1 tablespoon butter
  • 2 boneless skinless chicken breasts cooked and diced
  • 2 ribs celery finely diced
  • 2 green onions minced
  • 1/2 cup mayonnaise
  • 2 teaspoons lemon juice
  • 1 teaspoon mild curry paste
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Method

Toast bread; spread with butter.

Meanwhile, in bowl, stir together chicken, celery, green onions, mayonnaise, lemon juice, curry paste, salt and pepper. Spread over 4 of the toasted slices; sandwich with remaining slices.
