Boost burgers with the intense, delicious flavours of the Middle East. Pomegranate molasses, also called grenadine molasses, is found in Middle Eastern or specialty grocery stores. Its thick texture and sweettart flavour make it an ideal glaze for these burgers.

Ingredients

  • 1 lb ground lamb
  • 2 tablespoons tomato paste
  • 1 egg
  • 1 clove garlic grated
  • 1 teaspoon ground cumin
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon salt
  • 1/4 teaspoon hot pepper flakes
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons pomegranate molasses
  • 8 slices yellow tomatoes
  • 8 slices red tomato
  • 1/3 cup thinly sliced onion
  • 4 white buns halved

Method

In bowl, stir together lamb, tomato paste, egg, garlic, cumin, allspice, salt and hot pepper flakes until combined. Stir in parsley and cilantro. Shape into four 1/2-inch (1 cm) thick patties.

Place on greased grill over medium-high heat; brush with half of the molasses. Close lid and grill, turning once and brushing with remaining molasses, until instant-read thermometer inserted in centre reads 160ºF (71ºC), 12 to 15 minutes. Serve with tomato and onion in buns.
