Rhubarb Mint Mojito
Rhubarb syrup makes a flavourful base for this refreshing summer spritzer. If you prefer a nonalcoholic version, just omit the rum.

5 large mint leaves
1/4 cup (50 mL) Rhubarb Syrup
3 tbsp (45 mL) lime juice
1 oz (30 mL) white rum
1/3 cup (75 mL) soda water
Lime wedge and mint sprig
Preparation:
Place mint in cocktail shaker; half fill with ice. Muddle or mash with handle of wooden spoon until leaves are bruised and fragrant.
Add syrup, lime juice and rum; shake vigorously to blend and chill. Pour into highball glass. Top with soda water. Garnish with lime wedge and mint sprig.
