Toss this lemony salad with croutons, cucumbers or shaved fennel – or whatever crunchy additions you like.
Ingredients
- 1/3 cup olive oil 1/3 1/3cup cupolive oil
- 3 tbsp lemon juice 3 3tbsp tbsplemon juice
- 2 tsp chopped fresh dill 2 2tsp tspchopped fresh dill
- 1 tsp Dijon mustard 1 1tsp tspDijon mustard
- 1/2 tsp salt 1/2 1/2tsp tspsalt
- 1/4 tsp granulated sugar 1/4 1/4tsp tspgranulated sugar
- 1/4 tsp pepper 1/4 1/4tsp tsppepper
- 1 head romaine lettuce 1 1head romaine lettuce
- 1/2 cup shredded radicchio lettuce 1/2 1/2cup cupshredded radicchio lettuce
- 1/2 cup thinly sliced radishes 1/2 1/2cup cupthinly sliced radishradishes
Preparation
In small bowl, whisk together oil, lemon juice, dill, Dijon mustard, salt, sugar and pepper.
Tear romaine lettuce into bite-size pieces. In large bowl, toss together romaine, radicchio and radishes; add dressing and toss to coat.
