Sesame Roasted Cauliflower
These sesame-scented florets are a real treat, especially if mushy vegetables aren't a favourite in your house. Roasting may make the florets appear dry, but the first bite will prove how delicious and moist they really are.

1 head cauliflower (about 3 lb/1.5 kg)
2 tbsp (25 mL) vegetable oil
4 tsp (20 mL) sesame seeds
1 tbsp (15 mL) sesame oil
1/2 tsp (2 mL) salt
1/4 tsp (1 mL) pepper
1 green onion, thinly sliced
Preparation:
Cut cauliflower into florets. Toss with vegetable oil, sesame seeds, sesame oil, salt and pepper.
Spread on greased large rimmed baking sheet; roast in 400°F (200°C) oven, stirring once, until tender and browned, about 45 minutes.
Sprinkle with onion; toss and bake until slightly wilted, 5 minutes.
