Seven-Minute Frosting

Satiny, light and airy, this marshmallowy icing makes a great topper for any cupcake. It's also dairy-free.

  • 2/3 cup 2/3cupgranulated sugar
  • 1/4 cup 1/4cupwater
  • 2 2egg whiteegg whites
  • 1/4 tsp 1/4tspcream of tartar
  • 1 pinch 1pinchsalt
  • 1/2 tsp 1/2tspvanilla

In large heatproof bowl, whisk together sugar, water, egg whites, cream of tartar and salt.

Set bowl over saucepan of simmering water; beat constantly until mixture holds stiff peaks, 5 to 7 minutes.

Remove bowl from saucepan. Beat until frosting is cooled, 2 to 3 minutes. Beat in vanilla.
