With a satiny white finish, this fluffy frosting is also dairy free. Or try Cupcakes with Toasted Seven-Minute Frosting (variation below).

2/3 cup (150 mL) granulated sugar
2 egg whites
1/4 tsp (1 mL) cream of tartar
Pinch salt
1/2 tsp (2 mL) vanilla
Preparation:
In heatproof bowl, whisk together 1/4 cup (50 mL) water, sugar, egg whites, cream of tartar and salt.
Set bowl over saucepan of simmering water; beat constantly until mixture holds stiff peaks, 5 to 7 minutes.
Remove from saucepan. Beat until frosting is cooled, about 2 minutes. Beat in vanilla.

Cupcakes with Toasted Seven-Minute Frosting: Using piping bag fitted with plain tip, pipe frosting over 12 baked cupcakes. Sprinkle with 2 tbsp (25 mL) finely chopped chocolate.
Broil cupcakes on baking sheet until frosting is golden, turning baking sheet twice, 30 to 60 seconds.
