Smashed Avocado and Almonds on Toast

This combo makes a healthy, extremely simple lunch. If you have a toaster at work, tote the components and assemble the sandwich fresh at the office. A tomato and cucumber salad tastes really good alongside it.

  • 1 1ripe avocadoavocados
  • 2 tsp 2tsplemon juice
  • 1 pinch 1pincheach salt and pepper
  • 1/4 cup 1/4cupsoft goat cheese
  • 2 2slices whole wheat bread, toasted
  • 1/4 cup 1/4cupsliced almonds, toasted

Peel and pit avocado; scoop flesh into bowl. Smash with back of spoon until almost smooth; stir in lemon juice, salt and pepper.

Spread goat cheese on toast; top with avocado mixture and almonds.
