We'd never thought of smoked lean sausage as a standby until reader Frank Calver suggested it via the Internet. The sausage easily elevates simple canned lentils into a savoury rustic casserole. Canned navy or black beans would work here as well.

Ingredients

  • 1 tbsp vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 12 oz smoked sausages, thinly sliced
  • 2 carrots, sliced
  • 1/4 tsp dried Italian herb seasoning
  • 1 can (19 oz/540 mL) lentils, drained and rinsed
  • 1/2 cup chicken stock
  • 1 pinch pepper
  • Topping:
  • 1/3 cup dry breadcrumbs
  • 2 tbsp grated Parmesan cheese
  • 1 tbsp vegetable oil

Preparation

In large ovenproof skillet, heat oil over medium-high heat; cook onion and garlic, stirring occasionally, for about 3 minutes or until softened.

Add sausage, carrots and herb seasoning; cook for 5 minutes or until sausage is golden brown. Add lentils, chicken stock and pepper; cook for 5 minutes or until hot.

Topping: Combine bread crumbs, cheese and oil; sprinkle over sausage mixture. Broil for 1 minute or until golden.
