The nonhydrogenated shortening is available at health food stores and some supermarkets.

Ingredients

  • 3/4 tsp baking soda
  • 2 tbsp water
  • 1/2 cup nonhydrogenated shortening or butter
  • 1/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1/2 cup fancy molasses or cooking molasses
  • 2-1/4 cups all-purpose flour
  • 1/4 tsp salt
  • 1-1/2 tsp cinnamon
  • 1-1/2 tsp ginger
  • 1-1/2 tsp allspice

Preparation

In small bowl, dissolve baking soda in water; set aside.

In large bowl, beat together shortening and granulated and brown sugars; blend in molasses and soda mixture.

In separate bowl, whisk together flour, salt, cinnamon, ginger and allspice; stir into shortening mixture until combined.

On lightly floured surface, roll out dough to 1/4-inch (5 mm) thickness. Using 2-1/2-inch (6 cm) round cutter, cut out shapes. Place, 1 inch (2.5 cm) apart, on greased rimless baking sheets.

Bake in centre of 375°F (190°C) oven for 8 to 10 minutes or until tops spring back when lightly touched. Transfer to rack and let cool.
