This strata is great for a group at brunch, lunch or supper. You can assemble it a day ahead, so it's perfect for busy times.
Ingredients
- 1 loaf sourdough bread 1 loaf sourdough bread
- 1 pkg (10 oz/300 g) frozen spinach , thawed and squeezed dry1 pkg (10 oz/300 g) frozen spinach, thawed and squeezed dry
- 6 green onions , thinly sliced6 green onions, thinly sliced
- 1-1/2 cups shredded Swiss cheese 1-1/2 cups shredded Swiss cheese
- 1 cup diced ham 1 cup diced ham or smoked turkey
- 8 eggs 8 eggs
- 2-1/2 cups milk 2-1/2 cups milk
- 1 tbsp Dijon mustard 1 tbsp Dijon mustard
- 1/4 tsp salt 1/4 tsp salt
- 1/4 tsp pepper 1/4 tsp pepper
Preparation
In bowl, whisk together eggs, milk, mustard, salt and pepper; pour over bread mixture and let stand for 20 minutes. (Make-ahead: Cover and refrigerate for up to 24 hours.)
Bake in 375°F (190°C) oven until puffed and golden, about 45 minutes.
