Ingredients
- 2 chicken breasts , skinned and boned2 2chicken breastchicken breasts, skinned and boned
- 3 slices bacon , chopped3 3slices slicesbacon, chopped
- 1 clove garlic , minced1 1clove garliccloves of garlic, minced
- 1/2 cup finely diced ham 1/2 1/2cup cupfinely diced ham
- 1 tbsp finely chopped lemon rind 1 1tbsp tbspfinely chopped lemon rind
- 1-1/2 tsp chopped fresh mint 1-1/2 1-1/2tsp tspchopped fresh mint
- 2 cups chopped fresh spinach 2 2cups cupschopped fresh spinach
- 1/2 cup dry white wine 1/2 1/2cup cupdry white wine
- Salt Salt
- Pepper Pepper
Preparation
Chop chicken coarsely. Transfer to food processor or meat grinder; mince until finely ground.
In skillet, fry bacon until cooked but not crisp; stir in garlic and cook until fragrant. Stir in ham, chicken, lemon rind, mint, spinach and wine; cook until spinach is wilted and wine evaporated slightly. Season with salt and pepper to taste.
