Instead of fresh mint, you can use 1 tsp (5 mL) dried, but make the vinaigrette a day ahead to develop.
Ingredients
- 1/2 cup 1/2cupvegetable oil
- 1/3 cup 1/3cupcider vinegar
- 2 tbsp 2tbspliquid honey
- 1 tbsp 1tbspchopped fresh mint
- 1/2 tsp 1/2tspDijon mustard
- 1/4 tsp 1/4tspsalt
- 1/4 tsp 1/4tsppepper
- 1 cup 1cupthinly sliced mushroommushrooms
- 12 cups 12cupstorn mixed greens
Preparation
Whisk together oil, vinegar, honey, mint, mustard, salt and pepper. In bowl, toss greens and mushrooms with vinaigrette.
