Instead of fresh mint, you can use 1 tsp (5 mL) dried, but make the vinaigrette a day ahead to develop.
Ingredients
- 1/2 cup vegetable oil 1/2 1/2cup cupvegetable oil
- 1/3 cup cider vinegar 1/3 1/3cup cupcider vinegar
- 2 tbsp liquid honey 2 2tbsp tbspliquid honey
- 1 tbsp chopped fresh mint 1 1tbsp tbspchopped fresh mint
- 1/2 tsp Dijon mustard 1/2 1/2tsp tspDijon mustard
- 1/4 tsp salt 1/4 1/4tsp tspsalt
- 1/4 tsp pepper 1/4 1/4tsp tsppepper
- 1 cup thinly sliced mushrooms 1 1cup cupthinly sliced mushroommushrooms

Preparation
Whisk together oil, vinegar, honey, mint, mustard, salt and pepper. In bowl, toss greens and mushrooms with vinaigrette.
