Steak Tacos With Pebre Salsa

Inspired by traditional Chilean pebre salsa, the salsa on these steak tacos is equally delicious with chicken breast tacos. For a little heat, add a tablespoon of minced jalapeño peppers to the salsa.

  • 2 tsp 2tspvegetable oil
  • 12 oz 12oztop sirloin beef grilling steak
  • 1 cup 1cuppacked fresh cilantro
  • 1 cup 1cuppacked fresh parsley
  • 1 1clove garliccloves of garlic, chopped
  • 1/4 cup 1/4cupchopped red onion
  • 2 tbsp 2tbspolive oil
  • 2 tsp 2tspred wine vinegar
  • 1/4 tsp 1/4tspsalt
  • 1/4 tsp 1/4tsppepper
  • 8 8whole grain whole wheat tortillas, (6 inches/15 cm)
  • 1/2 cup 1/2cupcherry tomatocherry tomatoes, halved
  • 1 cup 1cupshredded Boston lettuce leafBoston lettuce leaves, or other lettuce

In skillet, heat vegetable oil over medium heat; cook steak, turning once, until medium-rare, 6 to 8 minutes. Let stand for 10 minutes; slice across the grain.

Meanwhile, in food processor, purée together cilantro, parsley, garlic, onion, olive oil, vinegar, salt and pepper; set aside.

Heat tortillas according to package directions. Divide steak among tortillas; top with cilantro mixture, tomatoes and lettuce.
