Here's a delicious open-faced sandwich that pairs beautifully with a salad made of chunks of tomato, chopped celery and a jar (6 oz/170 mL) of marinated artichokes.

Ingredients

  • 3/4 cup light mayonnaise
  • 4 pita breads
  • 2 cans (each 6.5 oz/184 g) flaked tuna, drained
  • 1/2 cup chopped celery
  • 1/2 cup mince dill pickles
  • 2 green onions, chopped
  • Salt
  • Pepper
  • 1 cup shredded Cheddar cheese

Preparation

Spread 1 tbsp (15 mL) of the mayonnaise over each pita. Combine tuna, celery, pickle, onions, remaining mayonnaise, and salt and pepper to taste; spread over pitas.

Sprinkle with cheese, covering as much area as possible. Broil on baking sheet 4 inches (10 cm) from heat for 3 minutes or until heated through and bubbly.
