Tea Sandwich recipe: Pimiento Cheese Spread

Servings: 1-2/3 cups (400 mL)

Ingredients:

    1 jar (4-1/2 oz/128 mL) pimientos, drained and rinsed
    1 cup (250 mL) cream cheese, softened
    1/3 cup (75 mL) light mayonnaise
    1 cup (250 mL) shredded extra-old Cheddar cheese
    1/4 tsp (1 mL) pepper

Preparation:

Pat pimientos dry; dice and set aside. In bowl, beat cream cheese with mayonnaise until smooth. Stir in cheese, pimientos and pepper.
