Tex-Mex Tomato Salsa pairs nicely with quesadillas or grilled pork tenderloin.
Ingredients
- 1/4 cup lime juice 1/4 1/4cup cuplime juice
- 1 clove garlic , minced1 1clove garliccloves of garlic, minced
- 1/4 tsp pepper 1/4 1/4tsp tsppepper
- 1 pinch salt 1 1pinch pinchsalt
- 3 large plum tomatoes , diced3 3large plum tomatoplum tomatoes, diced
- 1/2 small onion , diced1/2 1/2small onion, diced
- 1 small jalapeño peppers , seeded and minced1 1small smalljalapeño pepperjalapeño peppers, seeded and minced
- 2 tbsp chopped fresh coriander 2 2tbsp tbspchopped fresh coriander or parsley
Preparation
In large bowl, whisk together lime juice, garlic, pepper and salt.
Stir in tomatoes, onion, jalape?epper and coriander. Let stand for 20 minutes.
