Tex-Mex Tomato Salsa

Tex-Mex Tomato Salsa pairs nicely with quesadillas or grilled pork tenderloin.

Servings: 2 to 4 cups (500 mL to 1 L)

Ingredients:

    1/4 cup (50 mL) lime juice
    1 clove garlic, minced
    1/4 tsp (1 mL) pepper
    pinch salt
    3 large plum tomatoes, diced
    Half small onion, diced
    1 small jalapeño pepper, seeded and minced
    2 tbsp (25 mL) chopped fresh coriander or parsley

Preparation:

In large bowl, whisk together lime juice, garlic, pepper and salt.

Stir in tomatoes, onion, jalapeño pepper and coriander. Let stand for 20 minutes.
