If cutlets are unavailable, slice boneless skinless chicken breasts in half horizontally almost but not all the way through. Open out, place between plastic wrap and flatten until 1/2 inch (1 cm) thick.

Ingredients

  • 1 cup lightly packed trimmed watercress 1 cup lightly packed trimmed watercress or baby arugula leaves

  • Lemon Pepper Mayonnaise:
  • 1/2 cup light mayonnaise 1/2 cup light mayonnaise
  • 2 tbsp minced green onion 2 tbsp minced green onion
  • 2 tsp grainy mustard 2 tsp grainy mustard or Dijon mustard
  • 1/2 tsp grated lemon zest 1/2 tsp grated lemon zest
  • 2 tsp lemon juice 2 tsp lemon juice
  • 1/2 tsp pepper 1/2 tsp pepper
  • 1 pinch salt 1 pinch salt

Preparation

In shallow dish, combine oil, lemon juice, salt and pepper; add chicken, turning to coat. Let stand for 10 minutes.

Lemon Pepper Mayonnaise: Meanwhile, combine mayonnaise, green onion, mustard, lemon zest and juice, pepper and salt.

In large skillet, cook chicken over medium heat, turning once, until no longer pink inside, about 8 minutes.

Spread toasted bread with mayonnaise mixture. Layer bottom slices with watercress, tomato, then chicken. Sandwich with tops.
