Tofu Caesar Dressing

This dressing uses silken tofu and light mayonnaise, which provide creaminess without the fat of regular mayonnaise.

Servings: 1 cup (250 mL)

Preparation:

In blender or food processor, purée together tofu, mayonnaise, lemon juice, anchovy paste, mustard and pepper until smooth. Stir in garlic. (Make-ahead: Refrigerate in airtight container for up to 5 days.)
