Tortilla Roll-Ups with Veggie Dip

The students from Georgina Island School really enjoy this recipe and would have it every day if they had their choice.

Ingredients

  • 4 large 4largewhole wheat tortillawhole wheat tortillas
  • 4 tsp 4tspmustard
  • 8 slices 8slicesturkey or smoked chicken or Black Forest ham
  • 4 slices 4slicesmarble cheese, cut in half
  • 1 cup 1cupshredded lettuce
  • 1 cup 1cupchopped tomatotomatoes

Veggie Dip

  • 1/4 cup 1/4cuplight sour cream
  • 2 tbsp 2tbsplight mayonnaise
  • 2 tbsp 2tbspmild salsa
  • pinch pinchsalt
  • pinch pinchpepper
  • carrotcarrots, sticks
  • celery, sticks

Preparation

Veggie Dip: In bowl, stir together sour cream, mayonnaise, salsa, salt and pepper until combined. ( Make-ahead: Cover and refrigerate for up to 3 days.) Serve with carrot and celery sticks.

Meanwhile, brush tortillas with mustard. Lay 2 slices of turkey in centre of each tortilla. Top with cheese. Sprinkle with lettuce and tomato. Fold over ends and roll up. Serve with dip and veggies.
