Tortilla Roll-Ups with Veggie Dip
The students from Georgina Island School really enjoy this recipe and would have it every day if they had their choice.

Ingredients:
Suggested Recipes

4 large whole wheat tortillas
4 tsp (20 mL) mustard
8 slices turkey, smoked chicken or black forest ham
4 slices marble cheddar cheese, cut in half
1 cup (250 mL) shredded lettuce
1 cup (250 mL) chopped tomatoes
Veggie Dip:
1/4 cup (50 mL) light sour cream
2 tbsp (25 mL) light mayonnaise
2 tbsp (25 mL) mild salsa
Pinch each salt and pepper
carrot and celery sticks
Preparation:
Veggie Dip: In bowl, stir together sour cream, mayonnaise, salsa, salt and pepper until combined. ( Make-ahead: Cover and refrigerate for up to 3 days.) Serve with carrot and celery sticks.
Meanwhile, brush tortillas with mustard. Lay 2 slices of turkey in centre of each tortilla. Top with cheese. Sprinkle with lettuce and tomato. Fold over ends and roll up. Serve with dip and veggies.
