Tuna Fish Patties
Serve these crispy patties with salsa or seafood sauce and a lightly dressed salad.

20 soda crackers
3 cans (each 170 g) water-packed tuna, drained
1 onion, chopped
2 cloves garlic, minced
1 egg, beaten
1/3 cup (75 mL) light mayonnaise
2 tbsp (25 mL) chopped fresh coriander or parsley
2 tbsp (25 mL) dill pickle relish
1 tbsp (15 mL) lemon juice
1/4 tsp (1 mL) each salt and pepper
1 tbsp (15 mL) vegetable oil
Preparation:
In food processor or plastic bag and using rolling pin, coarsely crush crackers; place in bowl. Add tuna, onion, garlic, egg, mayonnaise, coriander, relish, lemon juice, salt and pepper. Using wet hands, shape into eight 1/2-inch (1 cm) thick patties. (Make-ahead: Cover and refrigerate for up to 24 hours.)
In nonstick skillet, heat oil over medium-high heat; fry patties, turning once, until golden and crisp, about 8 minutes.
