Walnut and Blue Cheese Stuffed Brie

For a help-yourself appetizer affair, this special Brie filling and its variations are delightful served on top of crackers or toasts and accompanied by sparkling wine or champagne. Canadian double cream Brie is ideal. The measurements for the fillings are for one 8-oz (250 g) Brie round. If using a larger round (2 lb/1 kg), triple the filling.

Ingredients

  • 1 round (8 oz/250 g) Brie cheese
  • Walnut Blue Cheese Filling
  • 1/4 cup chopped toasted walnuts
  • 1/4 cup crumbled  blue cheese
  • 2 tbsp chopped fresh parsley

Preparation

Walnut Blue Cheese Filling: Stir together walnuts, cheese and parsley.

Slice Brie in half horizontally. Sprinkle filling over bottom half of Brie; top with other half. Place on baking sheet; bake in 350°F (180°C) oven for 5 to 10 minutes or until cheese is softened.

Variations
Brie with Citrus Fruit Filling: Omit Walnut Blue Cheese Filling. Stir together 3 tbsp (50 mL) each finely chopped dried apricots and finely chopped dried figs, 1 tsp (5 mL) grated orange rind and 1 tbsp (15 mL) orange juice. Sprinkle over bottom half of Brie; top with other half and bake as above.

Brie ?a Grecque: Omit Walnut Blue Cheese Filling. Combine 1/4 cup (50 mL) crumbled feta cheese, 2 tbsp (25 mL) diced sweet red pepper, 1 tbsp (15 mL) chopped black olives and 1/4 tsp (1 mL) dried oregano. Sprinkle over bottom half of Brie; top with other half and bake as above.
