Ordinary eggs are a treat when dotted with peppers and tenderly tucked up in a tortilla.
Ingredients
- 1 onion , chopped1 1oniononions, chopped

- 1 small sweet green pepper , chopped1 1small sweet green peppersweet green peppers, chopped
- 2 slices bacon , chopped (optional)2 2slices slicesbacon, chopped (optional)
- 6 eggs 6 6eggeggs
- 1 Dash hot pepper sauce , (optional)1 1Dash Dashhot pepper sauce, (optional)
- 1 Pinch salt 1 1Pinch Pinchsalt
- 1 Pinch pepper 1 1Pinch Pinchpepper
- 4 large tortillas 4 4large tortillatortillas
- 1/2 cup shredded old Cheddar cheese 1/2 1/2cup cupshredded old cheddar cheese
Preparation
In nonstick skillet, cook onion, red and green peppers, and bacon (if using) over medium-high heat for 5 minutes or until vegetables are softened.
Whisk together eggs, hot pepper sauce (if using), salt and pepper; pour into pan and cook, stirring gently, for 3 minutes or until softly set.
Divide egg mixture among tortillas, spooning onto half of each; sprinkle with cheese. Fold uncovered half over filling, pressing edges gently. Broil on baking sheet for 30 seconds per side or until light gold and crisp.
