Mince and Tatties

Jan 11, 2012

Annabelle Waugh, with mom Patricia Donaldson.

Bits of savoury bacon make lean bison meatballs extra indulgent. We use boxed beef stock instead of broth for a more concentrated, meaty flavour. If you like, substitute lean ground beef for the bison. To keep the meatballs warm throughout the party, place them in a small slow cooker set on low heat.

These light, delicious “burgers” showcase the versatility of tofu. Easy-to-crumble extra-firm tofu makes a terrific vegetarian “ground beef,” which, when mixed with a variety of finely chopped vegetables, becomes a great vegetarian alternative to hamburgers. Serve with lemon wedges and a green salad, or in a pita with all the fixings.

This vegetable-filled ground lamb sauce alternates with layers of Canadian cheeses and pasta to make a Greek-style comfort casserole. You could use ground beef instead of lamb if you prefer. The Living Room Restaurant's Alberta Beef Burger

The Living Room Restaurant's Alberta Beef Burger

Jul 14, 2005

This burger from The Living Room Restaurant in Calgary makes the best-dressed burger list in Alberta, according to John Gilchrist, a restaurant critic for CBC Radio. Andrew Keen, executive chef and co-owner of the restaurant, swears by extra-lean Alberta-raised Galloway beef, but these patties are tasty with any ground beef. Unusual additions, such as miso, capers and sweet gherkins, give the burgers a complex, full flavour.

Stuffed Butternut Squash

Stuffed Butternut Squash

Oct 21, 2009

We grew butternut squash on our farm and had so many squash. It became a favourite of my daughter's. I baked it in the microwave and it was economical and tasty. I looked for ways to make the squash a complete meal and since we loved ground beef and cheese, decided to cook the squash, fill it with the ground meat mixture and top it with cheese. With a loaf of french bread, it is a complete meal.
