Grilled Pork Chops With Herbes Salées

These easy (and affordable!) pork chops are topped with Herbes Salées, a traditional French Canadian condiment.

Method

In large bowl, combine mustard, oil, Herbes Salées (see recipe) and lemon zest; season with pepper. Add pork chops and rub mixture all over meat. Refrigerate for at least 4 hours (or up to 12 hours).

Preheat barbecue to medium heat (about 350°F), lighting only one or two burners (in preparation for cooking over indirect heat); grease grill. Place pork chops on grill over unlit burners; cook, turning halfway through grilling time, until pork reaches internal temperature of 145°F, 30 to 40 minutes. Transfer to plate, tent with foil and let rest for 5 minutes before serving.
