🚴 Bring a large pot of water to a boil, salt generously, then cook the pasta according to the package instructions.

 

🚴 Meanwhile, in a large non-stick skillet, cook sausage (casing removed) on med-high for around 10 minutes, until sausage is browned and crumbled.

 

🚴 Drain any excess fat, then transfer cooked sausage to a plate and set aside.

 

🚴 In the same skillet, heat the olive oil and stir in the minced garlic, mushrooms and red chili flakes, and cook until the mushrooms are tender. Next, add the tomato paste and coconut cream, stirring until combined.

 

🚴 Simmer for a few minutes, stirring occasionally. Once the sauce thickens, add the cooked sausage back in.

 

🚴 Transfer the cooked pasta to the skillet and toss well until covered in sauce.

 

🚴 Stir in dried basil, season with salt and pepper to taste. Best served immediately!
