Royal Icing for Fruitcake

My sister-law made this Pumpkin Cheesecake for thanksgiving dinner in 2008 & it's a 5 star dessert. The recipe came from about.com/southernfood.
Look for white chocolate cigars at specialty chocolate shops, baking supply stores or online. Once you've tracked them down, measure their diameter and calculate how many you need to cover 38-inch (97 cm) and 26-inch (66 cm) round cakes. Of course, you'll want to have extras for any repair work. You will need double-sided tape to fasten the ribbons around the cakes, and twine to tie wildflowers in a delicate bundle.
It's easy to add wow factor to a simple layer cake using stunning ombré icing, a white chocolate drip and a crown of candy bark.
The bright colour and tart flavour of red currants are harmoniously balanced by slivered almonds and almond flavouring. Half of the currants can be replaced by raspberries, if desired.
You can substitute jam for the red and green cherries but don't fill the centres until just before serving.
Resembling snowy holly berries, the sugared cranberries add a wintery touch. They take 12 hours to soak, so be sure to start them a day ahead.
