Similar to a schnitzel or cutlet, this easy dish is delicious served either hot or cold in a sandwich. Or you can serve it with steamed rice and a salad for a complete meal. If you can't find mirin (Japanese sweet rice wine), you can substitute 1 tbsp (15 mL) each boiling water and granulated sugar.
My family is very fortunate to have a "sugar bush" in Northern Ontario, where we make our own maple syrup every spring. As a result, it is usually plentiful so we use it pretty much everyday in baking and cooking. We think that everything tastes better with maple syrup! I serve the ribs with a side of long-grain brown and Canadian wild rice blend that I make up (3/4 brown to 1/4 wild), oven roasted squash and steamed green beans with toasted walnuts. Tip: this is a terrific recipe to make earlier in the day (up to the point of cooking it for one hour). Just cover the baking dish with foil and keep refrigerated until ready, then you can visit with your guests while it bakes. I also put the rice on at that time as it takes an hour to steam and the squash can go right in the oven, at the same time and temperature as the ribs as well. You just have to steam the beans for the last few minutes before the meal. I have been making this recipe for over eighteen years and everyone of every age loves it.
Adding soaked wood chips to the grill gives this American classic its distinctive smokiness. You'll find this recipe in our book The Barbecue Collection.
Hearty beef stew is a cold-weather favourite. Use a well-marbled pot roast for the best flavour; the fat will melt while the beef cooks, which will help tenderize the meat.
My dad rarely cooked throughout the winter. Every once in a while he'd make a delicious Scottish classic, such as cock-a-leekie soup, but it was not often. However, when summer came, everything changed. Saturday night suddenly became burger night, and since the grill was involved, cooking the burgers – and naming them – became his manly duty. He would pick just about every condiment and spice out of the cupboard to make these moist, flavourful burgers. Waughburgers were never made the same way twice. The only constant was the heavy use of condiments inside the burger mixture. Eventually the job of choosing and stirring together the condiments for the “sauce” went to me, which I took on with great seriousness. I never needed anything but a slice of onion or pickle on top, but my brother, Duncan, still swears by the addition of a pineapple ring as a topper. – Annabelle Waugh
Our trick to cooking the perfect medium-rare prime rib? Start it off on high heat, then turn off the oven and let the roast cook gradually in the residual heat. Look for brined green peppercorns in the pickle aisle.
