Korean Grilled Chicken in Lettuce Wraps

Korean Grilled Chicken in Lettuce Wraps

Dec 10, 2002

Koreans often cut grilled meat or poultry into bite-size pieces and eat them, wrapped in lettuce, with accompaniments such as rice, hot sauce, garlic and aromatic greens. It's a fun and convivial meal whether enjoyed with family or friends. Use medium-grain Korean or Japanese rice, such as sushi rice, or Italian short-grain rice.

Serve with: Korean pickled cabbage (kimchi)

Szechuan Tofu with Pork

Szechuan Tofu with Pork

Jun 16, 2009

This spicy Chinese classic, called ma po doufu, is named after the pock-marked (ma) grandmother (po) who served this dish in her restaurant. Stir-fried green onions, ginger, black bean garlic sauce and ground pork provide the flavour, with tofu adding textural contrast. Sprinkle traditional ground toasted Szechuan pepper or toasted hot pepper flakes on top. Serve with rice and snow peas.

Roasted Chicken Breasts

Roasted Chicken Breasts

Jul 14, 2005

Because most of the fat in chicken is in the skin, removing it — and its 16 grams of fat — makes chicken a lean choice. The parsley, lemon and garlic topping does the job the skin usually performs, keeping the breasts moist and juicy. Serve with rice pilaf and Honey Acorn Squash. Pop the squash into the oven 15 minutes before adding the chicken.

Thai Devilled Eggs

Thai Devilled Eggs

Jul 8, 2013

While this twist on a classic already has a little kick from the chili garlic sauce, spice lovers might want extra heat in the form of a thin slice of Thai bird's-eye pepper on top. Older eggs tend to be easier to peel, but you can help the process by adding 1 tsp baking soda to the boiling water.

Mussels in Black Bean Sauce

Mussels in Black Bean Sauce

Nov 23, 2005

These mussels are in a rich, fragrant broth and take no time to clean or cook; most are already cleaned and only need to be rinsed. Chinese black bean sauce lends authentic flavour to stir-fried vegetables or steamed fish for quick takeout-style meals at home. Serve over steamed rice along with broccoli sautéed with garlic and a pinch of hot pepper flakes.

Garlicky Prime Rib and Rosemary Rack of Pork

Garlicky Prime Rib and Rosemary Rack of Pork

Jun 29, 2009

Think big when you're entertaining this summer and grill a succulent roast of beef or pork to satisfy a crowd. Just close the lid on a herb-and-garlic-coated roast and entice guests with intoxicating aromas as it cooks slowly over indirect heat. For the rack of pork, buy an eight-rib roast; have your butcher chine (remove the backbone) or saw between the ribs for easy carving.

Cedar Planked Salmon with Maple Curry Glaze

Cedar Planked Salmon with Maple Curry Glaze

May 13, 2009

This dish is a favorite at our home for entertaining - it is delicious, easy to make and guests are always impressed with the presentation (we bring the plank directly to the table and serve off of it!). My husband, who is currently serving in Afghanistan, was home on leave recently and it was his homecoming request for dinner! Since we are currently living in New Brunswick, we love that fresh atlantic salmon is readily available and the maple syrup here is some of the best in the world! In the spring time, I love to serve this dish with steamed fresh fiddleheads tossed in garlic butter and jasmine or basmati rice (or wild rice when we were living near Winnipeg). At other times of the year, I serve garlic sauteed spinach. If you aren't a curry lover, just leave it out and the dish is still great! Cedar planked Salmon is fantastic on the grill but can also be prepared in the oven. Enjoy!!

Braised Pork Shoulder and White Beans

Braised Pork Shoulder and White Beans

Sep 28, 2009

The humble pork shoulder roast becomes meltingly tender when braised. A bone-in pork picnic roast or boneless pork butt roast can be used interchangeably in this recipe, depending on what is available (but if using a shoulder picnic roast, leave its fat cap on for extra flavour). The Garlic Vinegar Sauce adds a hit of acidity to cut through the richness of the meal. Pass it around so that each person can add it according to taste.

Mixed Caesar Salad

Mixed Caesar Salad

Jul 14, 2005

Garlic breath is no problem for Jessica Lajner, who loves Caesar-style salad in her lunch once a week, along with a tortilla wrap stuffed with luncheon meat. Mom stays happy when Jessica rounds out her lunch with seedless grapes or a pear. To keep the tasty and nutritious salad fresh, pack the dressing on the side for kids to pour on at school. A portion of this salad is great to boost the day's vegetable intake.
