Crispy Cheese-Topped Pork Chops

Thin pork chops topped with a crispy cheese mix are irresistible. Canadian Mushroom Oka cheese gives another layer of flavour but you also could use plain Canadian Oka Classic, an aged Canadian Gouda or old Canadian Cheddar cheese. Or try another flavoured cheese, such as Canadian cumin-flecked Gouda or Canadian Pepper Jack.

Spinach and Ricotta Naan Pizzas

Thin, fluffy naan makes an ideal no-fuss base for quick weeknight pizzas; a simple cumin-spiced spinach topping gives a nod to the flatbread's Indian heritage. Regular ready-made naan is high in sodium, but if you want to lower your intake, just switch to a sodium-reduced version, such as the one made by President's Choice.

Cuban Pork Roast with Mojo Crillo

If we close our eyes, the memories of mojo — citrus juice sauce spiked with garlic and cumin — drizzled over spit-roasted pork are as alive as when we tasted it in Cuba. We've recreated the experience with a roast marinated in these ingredients and served with its own drippings. Cubans would use 1 cup (250 mL) sour orange juice from Seville oranges, but because they are impossible to find out-of-season in Canada, we have substituted lime and lemon juice. Be sure to use a roast with the backbone removed or ask the butcher to remove it for you. The slices are neater than if the butcher simply cuts between the chops.
