Fresh and light, this crunchy salad is a delicious way to enjoy cucumbers all year round.
They've been cultivated since the 16th century, and these tiny cabbage heads are still going strong. The latest incarnation? Eating them raw in place of kale and romaine in dishes like this take on Caesar salad.
This is best served right away, when the pasta is freshly coated with the olive oil and pesto mixture.
There's just the right amount of pesto in each jar for four servings of pasta, tomatoes or grilled chicken or fish. Frozen pesto adds summer sunshine to winter braised dishes, stews, chili and soups.
