Moroccan Vegetable Couscous
This vegetable and chickpea couscous fills you up without filling you out. Chickpeas are high in fibre and iron, and the prunes add a hint of natural sweetness, which makes this all-in-one dish feel indulgent.

Mother Nature invented cauliflower as a perfect partner to cheese. Nothing else in the vegetable world (except, perhaps, potatoes) pairs as wonderfully with cheese, as cooks around the cheese-making world have proved throughout history. Serve with extra Canadian Parmesan cheese and pepper to sprinkle over top.
Cauliflower purée adds velvety texture without the need for whipping cream, resulting in a lighter, healthier chowder. Be sure to remove the vent from your blender lid and cover the hole with a tea towel to relieve any pressure caused by blending the hot soup.
Gumbo is a Creole specialty of New Orleans that typically contains sausage, chicken, ham, shrimp, crab or oysters. Its stew-like consistency makes for a hearty dish. To give it an authentic twist, top with a pinch of filé powder, made from ground dried sassafras leaves, if you can find it. But don't worry if you can't: This gumbo is equally delicious without it.
For a quick protein boost, stir in half a cup of cooked shelled edamame per serving.
Packaged ravioli, found in the deli section of most supermarkets, is ideal for soaking up this creamy herbed mushroom sauce. If you like, top with crumbled goat cheese or grated Romano or Parmesan cheese.
This savoury pancake makes a great starter for a small group or a hearty meal that serves one or two people. Look for okonomi sauce and bonito flakes at Asian supermarkets. If you can't find the more richly flavoured Japanese-style mayonnaise, substitute with regular mayo.
Leftovers from a turkey dinner are inevitable, and pot pie is a delicious way to serve them. Apples add sweetness to this not-so-traditional version and complement the easy topping.
In the morning, pack the soup in an insulated container so it stays warm until lunch. Serve with carrot and celery sticks, a few crackers and a piece of fruit. You can easily double this recipe (to use up a whole package of ground turkey) and serve it for dinner.
Our tender beef Stroganoff can be made in less time but with just as much flavour as the classic Russian version. Seared steak, folded in near the end, is our sneaky cheat.
