Not so spooky but definitely colourful, this makes an attractive autumn side dish.
If you aren't taking this on your trip, enjoy it at home garnished with chopped green onions and sour cream.
Roasting the carrots, shallots and garlic brings out their natural sweetness. If you prefer a looser dip, add a little more water. Keep it covered with plastic wrap until just before serving then give it a stir. Offer it with flatbread for dipping.
Individual little baking dishes are just right for a meal for two. Jarred pesto makes cooking it easy.
Here's a Japanese soup that is home-kitchen friendly. Look for miso (a prepared soybean and rice or barley paste) and nori (paper-thin sheets of seaweed used for sushi) at Asian or health food stores. Because miso settles, have guests stir their soup before eating.
