Barbecued Flank Steak

Inexpensive flank steak, sometimes known as London Broil, makes a delicious change from burgers and chops when a crowd is coming for dinner. Each steak weighs one to 1-1/2 pounds (500 to 750 g) and because there is no fat or bone, will feed three or four guests. To produce tender meat from flank steaks, grill them until rare or medium-rare and slice them very thinly diagonally across the grain.

Chili Garlic Sauce

This Asian-inspired sauce is delicious on noodles and in Vietnamese-style soups – or even on pizza and burgers. It's wonderful made with crimson hot peppers or Sheppard peppers. If you want to boost the heat, add six to 10 red Scotch bonnet or habanero peppers, or 20 to 30 Thai bird's-eye peppers. If you use cayenne or red finger hot peppers, they should be hot enough on their own.

Marion Warhaft's Imam Bayeldi

"When I was a kid, my mother cooked something different every night. She made a lot of great French and Mediterranean dishes." Graduate student Mark Warhaft has inherited a discriminating palate and love of food from his mother, Winnipeg Free Press restaurant critic Marion Warhaft. He entertains frequently, specializing in Thai food, and for the past two years has operated a very successful food booth at the Winnipeg Folk Festival. "I love her Imam Bayeldi. It's great, and I've been trying to get her to write down her recipe for years." Imam Bayeldi, a robust Turkish dish of tomatoes and eggplant, is a terrific accompaniment for barbecued chicken, burgers or kabobs.
